Snow's Butter Cake
This
recipe features Tokie's Maple Jacks Pancake and Baking Mix.
Make your own delicous, butter cake - a dessert that can stand
sweetly alone, or as the base for your own signature dessert,
topped with fruit, drizzled with chocolate, or made into a
trifle.
Cena
Snow was a German-Irish girl who married Gustavus Snow straight
off the boat from Dublin. The Snows raised a family of eleven
in Alameda, California. Cena was the mother of Thelma, creator
of the original blonde brownie, and Thelma was, of course,
the mother of Deborah Tokarz -"Tokie."

Cena Snow's butter cake:
Needed
for mixing:
- Maple
Jacks Maple Baking Mix

Preheated oven at 350 degrees

Mixer
-
2 qt bowl
-
measuring cup
-
measuring spoons
-
spatula
-
Bundt pan, or two 8x8 inch pans or 4 small loaf pans or
1 large loaf pan
(greased
and floured with Maple Jacks Maple Baking Mix)
Mix
together on low speed:
- 12
tablespoons softened butter
- 1/2
cup sugar (this is a reduced sugar mix, if more is wanted,
add an extra 1/2 cup)
Add
to mix - blended:
- 2
tablespoons sour cream
- 2/3
cup buttermilk
- 3
large egg yolks
- 1
whole egg
- 1
tablespoon Vanilla extract
Add
to mix slowly while beating slowly OR you'll find flour everywhere
- 1/4
tsp salt (or not)
- 2
tablespoons baking power (but only if you want a high rising
cake- baking mix has gluten free baking powder in it)
- 2
1/2 cups of Maple Jacks Maple Baking Mix
Blend
all of the above. Pour into pans. Bake until cake tester comes
out clean. Pans and ovens will vary, but no less than 25 minutes
for the smaller pans.
